The Adelaide Hills is renowned for Australia’s finest Sauvignon Blanc. Harvesting in the cool of night ensures we extract vibrant examples of cooler climate fruit. The grapes were crushed and pressed with free run and pressings fractions kept separate. Each parcel of grapes was fermented separately in stainless steel tanks to maintain the fresh lively characters and varietal definition. Only our most pristine free run parcels have been used to make this extremely limited wine.
