NEST EGG Chardonnay 2012

Concentrated aromas include nectarine and peach intermingled with pineapple, cream, hazelnut and subtle spice. The palate is a long, intense expression of the aromas anchored by balanced oak and a creamy complexity from malolactic fermentation in the finest of French oak. Partial use of wild yeast followed by lees stirring further enhances the sophistication and length of the palate.

Vineyard

Location of Vineyards: Central Hills; Woodside & Balhannah

An early morning, hand-picked selection of the best grapes from two Adelaide Hills vineyards. All fruit was French (Dijon) clone
Chardonnay.

 

Winemaking

Crushing: No crushing - whole bunch pressed.

Processing: all batches are kept separate from vineyard to blending stage.

Fermentation: The Chardonnay was whole bunch pressed straight into new (40%), one and two year old tight grain French oak barriques. They were then allowed to wild ferment (no cultured yeast added) until dry. The barrels were stirred twice per week and allowed to go through malolactic fermentation for 10 months.

Blending: All batches are kept separate, until blending and samples are taken from each batch. These are assessed by winemaking team who look for fruit complexity colour, tannin and acidity to  put together the  best possible blend. 

Comments: Wild fermentation allows the different yeast species present on the grapes to ferment the wine, which results in a complex and more textured style of Chardonnay. Stirring the yeast lees (sediment) post-fermentation during ageing means the oak character from barrel maturation is very integrated and a subtle rather than dominant component of the wine. Our aim is for an elegant, textured and complexly flavoured style of Chardonnay that reflects the quality of the Adelaide Hills region for Chardonnay.

 

Tasting Notes

Colour: Straw green colour

Aroma: Complex stone fruit Chardonnay aromas intermingled with a subtle floral and nutty notes.

Flavour: Finely textured palate, with an array of complex flavours of nectarine like Chardonnay fruit, subtle nuances of nuts from oak maturation, and a long, minerally character that lingers long on the aftertaste.
